A smoky and tangy sauce that goes great with the chorizo and cheese quesadilla’s, cheeseburgers or cheesesteak sandwiches.

Ingredients:
3 Tbs of canned chipotles*, pureed
1 Tbs fresh lemon juice
½ cup mayonnaise
¼ cup sour cream
½ tsp kosher salt
Procedure:
FOR THE AIOLI
Chipotle puree can be made by pureeing a small can of chipotles in adobo and a tablespoon of water in a blender until smooth. Can be stored in an airtight container for 2-3 weeks in the fridge.
Combine all ingredients in a mixing bowl and whisk until smooth and well mixed. Can be kept up to 3-4 days in an airtight container in the fridge.
Will keep for a week in the refrigerator
